わけだ/はずだ — Reasoning and Expectation

Ten Seconds at the Tempura Counter

日本橋の天ぷら屋「みかわ」。カウンター六席だけ。予約は三ヶ月待ちのはずです。今夜、やっと座れました。目の前で、早乙女さんが海老を揚げています。

油の温度は百八十度。「ごま油を使っているから、この香りなわけですね」と隣の常連が言いました。なるほど。衣が薄いから、素材の味がよくわかるわけだ。

海老が油に入った瞬間、音が変わりました。「この音を聞けば、あと十秒で完璧に揚がるはずです」と早乙女さん。五十年の経験がある。だからこの精度なわけだ。

十秒後、海老が皿に置かれました。カラッとした衣。中はふわっと柔らかいはずです。一口食べると、その通り。五十年毎日揚げているから、この完璧さなわけです。天ぷらは十秒の芸術です。
