一位评审问：「你如何看待鼎泰丰模式？」王芳答道：「值得注意的是，鼎泰丰的成功恰恰说明了标准化与手工技艺之间的张力。传统技艺正面临后继无人的困境，而连锁模式提供了一种生存路径。」
答辩结束后，王芳带我去了南翔馒头店。「你知道吗，南翔小笼有一百六十多年历史了。」她吹了吹蒸笼里冒出的热气。「论文写得再好，也不如这一口汤汁。」导师隔桌喊道：「这也是一种论证方式！」
