Décrire un plat — Describing a Dish

You are learning describing a dish: you will read the scene it happens in, learn 10 words and phrases, take apart the pattern behind them (describing dishes — relative clauses + texture/flavor vocabulary), hear them in a conversation, rehearse them, and finish by saying one thing out loud to be graded.

The scene

At Septime or any ambitious Paris restaurant. The vocabulary of description: textures, flavors, techniques, origins, the coherence of a plate. Moving beyond "c'est délicieux" to genuine culinary description.

Septime — Le Turbot

The turbot arrives third — a thick square of white fish, roasted on one side to a golden crust, the other side barely touched. Around it: a verjus beurre blanc, pickled fennel, a scatter of sea herbs.

The stranger writes in his notebook before eating:

Le turbot de ligne, dont la chair est nacrée et ferme, posé sur un beurre blanc au verjus dont l'acidité tranche avec la richesse du poisson. La peau est croustillante — parfaite. La sauce est onctueuse sans être lourde. C'est un plat qui allie la puissance du produit à la délicatesse de la technique.

He eats it. It is exactly what he described, and more. The chef has done something that takes real skill: made a simple thing seem inevitable.

L'équilibre des saveurs, ici, est remarquable. Le chef a su sublimer le produit sans le masquer.
