How Is It Prepared — Cooking Methods

Lesson 18 of 170 · Level 1 of 6All lessons
In this lesson

You are learning cooking methods: you will read the scene it happens in, take apart the pattern behind them (cooking methods + texture vocabulary), hear them in a conversation, rehearse them, and finish by saying one thing out loud to be graded.

The scene

Reading an American restaurant menu. The cooking method vocabulary — braised, roasted, seared, grilled, poached, pan-roasted — is the key to understanding what you're ordering. Five terms decode most menus.

Gramercy Tavern — The Courses

The heritage pork arrives third, after the oyster mushroom soup and the beet salad. It has been braised for eight hours, the server explained — in apple cider and aromatics. The meat is so tender it parts with a spoon.

"How is the pork prepared?" the stranger had asked before ordering. The answer was a four-sentence description of the sourcing, the brine, the braise, and the reduction. He understood half of it and ordered immediately.

Now, eating: "This is extraordinary. So tender." His companion agrees. "The sauce is incredible — what's in it?"

Their server materializes. "Apple cider reduction, with a little mustard and thyme. The chef makes it fresh each day."

"Please tell the chef — this is perfectly cooked. Really extraordinary." The server smiles and means it when she says she will.
